THE HAPPY UNIVERSE OF GRAINS ...unlike other grains, the vitamin B3 (also called niacin) content in corn is not highly available for absorption if it is not subjected to certain treatments. A diet almost exclusively based on corn, and thus poor in niacin, caused a terrible disease, pellagra, which affected some areas of northern Italy until the early twentieth century. DID YOU KNOW THAT... Although grains are different in many respects, they have one common characteristic: a solid grain that does not open and remains well sealed even when fully ripe. This grain, which in botany is called kernel , consists of three layers: • the outermost part (the pericarp, commonly called bran) rich in fibre and mineral salts and whose function is to protect the kernel; • the innermost part (the endosperm), rich in starch and proteins; • the germ, rich in fats and vitamins, which will develop into the new seedling.
