RYE OAT BARLEY WHEAT RICE CORN Together with grains we can classify the so-called “Pseudo-grains” : products similar to grains both in terms of use and nutritional characteristics, but which do not belong to the family of gramineae from a botanical point of view. Here are some of them: • BUCKWHEAT : traditionally used in Valtellina, where it is still used in the production of pasta (e.g. pizzoccheri) and polenta, also in combination with other flours (polenta taragna); • QUINOA : initially grown in South America, it has spread to all continents and is commonly consumed in grains; • AMARANTH : originally from Mexico, where it was known by the Aztec as “Grain of the Gods”.
