PROCEDURE FOR THE MEAT 1 | Place the slices of meat between two sheets of cling film or parchment paper and, placing them on a work table or cutting board, beat them with a meat tenderiser to flatten them; 2 | Mix the extra virgin olive oil with the lemon juice, a pinch of salt, pepper and add the chopped chives; 3 | Brush both sides of the slices of meat with the obtained mixture and let them sit in the fridge, covered with cling film, for about 30 minutes; 4 | In the meantime, clean the peppers, courgettes and mushrooms and cut everything into cubes; 5 | Cook the vegetables in a pan with a little oil for about 10 minutes. At the end, add the crushed garlic, a pinch of salt and pepper, mix and cover with a lid and let it cool; 6 | Take the slices of meat out of the fridge and place some vegetables in the centre of each. Now take the ends of the slices of meat and close them like a bag, tying them with a chive stem (if this is difficult you can use kitchen string); 7 | Steam cook the dumplings for about 5-7 minutes. Once cooked, place them on the asparagus cream and garnish the plate with the leftover vegetables. 4 | Then pour the asparagus into the blender with some dill and blend adding the extra virgin olive oil (if necessary, add a little cooking water to make the sauce more liquid). At the end, add salt or pepper, if necessary. ...to steam cook it is possible to use special equipment such as electric steamers or, if you do not have this equipment available, you can use more homemade techniques, but just as effective. For this second option you will only require : • specific steel or bamboo baskets, or more simply a steel or silicone colander; • a saucepan to rest the basket or colander on (attention: the saucepan must be slightly smaller than the colander to ensure that it remains suspended); • a lid. To cook: • pour some water into the saucepan (about 2-3 cms); • insert the colander making sure it does not touch the water; • bring the water to a boil and place the food in the colander and cover with the lid for the time necessary for cooking.
