CARBOHYDRATES Carbohydrates are our main source of energy. There are two types: “simple” which provide immediate energy, and “complex” which release energy more slowly. Simple carbohydrates are found, for example, in sugar, honey, and fruit. Complex carbohydrates are mainly found in legumes, potatoes, cereals, and their derived products, such as, pasta and bread. FIBRE Dietary fibre is contained in plant-based food: fruit, vegetables, legumes, whole grains (e.g. wheat, spelt, barley, oats, rice, corn), and their derived products. Fibre has various physiological functions which help maintain good health: it regulates intestinal transit (by acting as a “sweeper” in the intestine and removing useless or harmful substances), slows and/or limits the absorption of other nutrients (e.g. carbohydrates and fats), and controls cholesterol and blood sugar levels. Fibre is able to absorb water (like a “sponge”) during intestinal transit and increases the feeling of fullness which helps to reduce hunger and how much we eat. PROTEINS Proteins are essential for: building muscle, hair, nails and skin; carrying oxygen; the immune and digestive systems; and many more functions. Elements called “amino acids” , which can be represented as coloured building blocks, link together in long chains to form proteins. “Essential” amino acids need to be introduced through the diet as the body is unable to produce them. Proteins made from essential amino acids are considered of an excellent nutritional quality. LEGEND LET’S EAT WELL
