LET’S EAT WELL 63 RAW MILK Finally, our offer of excellent products leads us towards raw milk cheeses: this traditional processing preserves, in the milk, part of the aromatic and microbiological components brought by the production environment and by the animals through diet, enhancing the biodiversity of the lactic flora and characterising these particular cheeses with an intense and more variable taste as the seasons change. Great care is paid to the hygiene of the stalls and to the milk transport conditions, to avoid unwanted contamination. The cheeses produced with raw milk include: Bra Tenero DOP, Raschera DOP, Caciocavallo di Agnone Semistagionato, Branzi, Veracapra and Pecorino made with raw milk , in its versions with chilli pepper, black pepper and truffle. As a food company, Esselunga chooses the best for its cheese and delicatessen productions, such as gnocchi, ready meals, canapes, pates, pestos and sauces, all prepared in the Limito di Pioltello plant, where recipes inspired by seasonality are combined with the respect for tradition and authenticity. This allows us to produce over 32 million packages per year. Our Ready-to-eat line was launched among fresh produce and delicatessen, and expanded in 2020, to showcase some traditional regional recipes; in particular, new products were introduced such as lean capon, “cacio e pepe” sauce and “polenta taragna orobica”. 32 2020 Over million packages produced per year.
